Chef Romualdo Castillo presents A Taste of BGC at Seda Centrio

 

It’s not just the third year of Ayala Malls Signature Fashion Event that Centrio Mall will be celebrating this Sunday, May 24, 2015.

 

Right after the last Community Models step off the runway at Style Origin 2015, they will be treated to a prelude for a week-long culinary event at the adjacent Seda Centrio, Cagayan de Oro’s only Lifestyle Hotel.

Sega BGC Executive Chef Pepe Castillo will be bringing “A Taste of BGC” on May 25-29 at Seda Centrio’s Misto, seeking to bring to the City of Golden Friendship the standards of BGC, the most cosmopolitan city in the Philippines

 

Misto, Seda’s signature restaurant, is the Italian word for “mixed”, a term that describes the medley of international flavors that comprise its a la carte selection ranging from universal classics to Filipino favorites. 

 

“The key,” says Chef Pepe, “is precise timing, plus the use of fresh, high-quality ingredients.” His food has consistently garnered rave reviews from diners who find the experience doubly impressive due to his artistic presentations.

A sampling of the post-Style Origin menu Chef Pepe has prepared  tickle the imagination of principals and participants include Roasted Hokkaido pumpkin with cilantro flavor soup, A cold selection including Prawns and mango cocktail, Fresh Asian spring roll with sweet and spicy chili dip, Cheese board with grapes and walnuts and Raspberry vinaigrette, balsamic vinaigrette, honey mustard dressing.

 

 “This is how we give our dishes that personal touch,” he explains. “We stay true to the original recipe, then leave our own imprint by modifying its appearance to enhance its aesthetic appeal.” ​

 

A sampling of the Main Course includes Crunchy two month old pork belly with paw-paw sauce, Free-range buffalo chicken with blue cheese dip, Norwegian salmon skewer with sweet onion and capsicum, Baked New Zealand mussel, Prawns thermidor in puff pastry shell and Linguini pasta with chunky tomato sauce.

A multi-awarded culinary expert, he has won top honors in prestigious industry competitions including “Best Dessert” in the Manila Black Box Culinary Challenge, “Award of Excellence” in the Cold Meat Platter category of Chefs on Parade and “Bread-baking Champion” in an activity sponsored by the Les Toques Blanches Philippines chefs association.

 

“A Taste of BGC” is the second edition of Seda’s “Chefs Exchange” which highlights the specialties of Seda’s chefs in BGC, Nuvali, Centrio and Abreeza to help local patrons personally experience the wide range of menus from its various locations without going there.

 

Just last month, Seda Centrio featured “A Taste of Japan” with Seda Nuvali Executive Sous Chef Danilo Gallardo.
